The chef behind Clay Pigeon is bringing Italian cuisine to the Waterside development.
Chef Marcus Paslay will open Piattello Italian Kitchen at Waterside "this holiday season," according to a news release. It joins Whole Foods Market and CycleBar among other businesses slated to open on the 63-acre mixed used development currently under construction at Bryant Irvin Road and Arborlawn Drive. Piattello Italian Kitchen will span 5,300 square feet and have an 800 square-foot patio.
The menu will consist of antipasti, pasta, pizza, soups and salads among other items made from scratch. The restaurant will also feature a full bar, as well as a coffee bar serving Avoca coffee, pastries and yogurt partfaits.
Appetizers range between $6-$10, and entrees range between $15-$28.
Dallas-based Mitchell Garman Architects will design the restaurant, which have metal-framed windows, brass light fixtures and concrete floors for a "casual, modern vibe," according to the release. The restaurant will also have a wood stone pizza oven.
The restaurant pays homage to Paslay's other Fort Worth establishment, Clay Pigeon – the Italian term "piattello" refers to both a "plate" and a "clay pigeon."
“Piattello's menu will stay close to my cooking philosophy of what's in-season and freshest,” Paslay said. “I'm excited to breathe new air into the world of Italian cuisine while crafting traditional dishes that have my own unique spin.”
In the meantime, Paslay will be launching a Thanksgiving to-go menu at Clay Pigeon in November, featuring Thanksgiving staples like turkey, ham, sweet potato casserole and pumpkin pie.
